Squash in tomato sauce for the winter: awesome step-by-step recipe for delicious canned vegetables without oil. Ingredients for Zucchini:
- zucchini - 2 kg;
- tomatoes - 1.5 kg;
- dried carrots - 50 g;
- ground sweet paprika - 10 g;
- table salt - 20 g;
- granulated sugar - 35 g;
- Vinegar 9% - 20 ml.
Method of cooking squash in tomato
Peel zucchini peeled. If the vegetables are ripe, then we cut out a seed bag with seeds, if you are young, you can harvest them together with the seeds.
Peeled vegetables cut into small slices about a centimeter thick or cut into cubes.
Cut tomatoes into large ones, throw them into the brazier. Stew on medium heat for about half an hour, then rub the mass through a sieve to get rid of the seeds and pieces of tomato skin.
Mix grated tomato puree with sliced zucchini. For stewing, it is better to use a cast-iron brazier or a thick-bottomed saucepan.
Add dried carrots, table salt, granulated sugar and ground sweet paprika to the pan. Close the roaster lid and simmer the vegetables on low heat for about 60 minutes. 5-10 minutes before readiness add 9% vinegar.
Banks and lids are thoroughly washed with warm water and soda, then rinsed with hot clean water and dried in the oven at about 100 degrees Celsius for about 10 minutes. Covers throw in boiling water for a few minutes.
We decompose hot vegetables in dry jars, tightly cork, turn upside down and wrap with a woolen blanket. We leave it under the blanket until it cools completely, then we put it in a cold cellar or basement.
