Rich, thick tomato soup with meatballs and beans from the category of easy quick recipes. To save time, we use canned beans in our own juice or in tomato and ready minced meat, mixed with pork, beef, chicken. Fresh tomatoes in this recipe will not be needed, add a thick tomato to the vegetable fry - it will give the soup a rich tomato flavor.

If time allows, you can boil chicken or meat broth for the soup, or make boiled bean soup, soaking it for several hours and then boiling it until ready. See step-by-step recipe with photos.

Ingredients:

  • potatoes - 2 pieces;
  • carrots - 1 pc;
  • onion - 2 small heads;
  • canned beans - 5 tbsp. l;
  • thick tomato sauce - 2-3 tbsp. l;
  • vegetable oil - 2 tbsp. l;
  • minced meat - 250 gr;
  • egg - 1 small;
  • black pepper - 2 pinches;
  • salt - to taste;
  • sour cream - to serve.

How to cook tomato soup with meatballs and beans

While water or broth is heated to a boil, we cut carrots, potatoes and onion into shredded cube.

Put the potatoes into boiling water / broth, add some salt and wait for the boiling to start. Adjust the heat so that the boil is weak. Leave to cook until ready / soft potatoes.

In a frying pan with hot oil, pass to a translucency bow. Add carrots, cover and simmer for five to seven minutes.

To the softened vegetables add thick tomato sauce. Mix, slightly increase the fire to fry the tomato, give the roast a rich sour taste.

While the vegetables are fried, cook the minced meatballs. Add minced onion, beaten egg, salt and pepper to the meat or chicken mince. All carefully mix.

Add a tomato and vegetable broth to the broth with the finished potatoes.

Putting meatballs in boiling soup. Stir so as not to stick to the bottom and cook almost until the meat balls are ready (8-10 minutes).

Pour the canned beans into the soup, first casting it back onto a sieve. Give the soup to boil, cook another five minutes and turn it off. Leave the soup on the stove for about ten minutes to infuse, taste.

Serve thick tomato soup hot. You can add sour cream, and for lovers of spicy dishes to offer adjika or pickled, salted chili peppers.
