Cheese Tomato Soup

Tomato soup with cheese can be cooked at any time of the year. In the summer to use fresh tomatoes, in the winter they will help out home-made canned or tomato juice. If there are no homemade preparations, buy fresh tomatoes in the supermarket, just choose the ripest, bright red color. There are two options for making a light, healthy tomato soup with cheese: mash or chop only tomatoes, and leave the fried vegetables in slices. Ingredients:

  • fresh tomatoes - 500 gr;
  • carrots - 1 pc;
  • small onion - 1 pc;
  • sweet pepper - 1 pc;
  • vegetable oil - 2 tbsp. l;
  • salt - to taste;
  • water or chicken broth - 1 cup;
  • cream or sour cream - 2 tbsp. l;
  • hard cheese - 50 gr;
  • ground black pepper - 2-3 pinches.

How To Cook Tomato Soup With Cheese

Scald tomatoes with boiling water, peel and chop the blender into a smooth mashed potatoes. You can replace tomatoes with thick tomato juice with pulp.

Cut the carrot into slices, chop the sweet pepper into straws, cut into cubes or half-rings onion.

We spread onions in the heated oil, passeruem a couple of minutes, soaking it with oil. Then add carrots, bell peppers.

Let us blend the vegetable mixture with a blender into a thick uniform puree. If you are cooking soup with pieces of vegetables, skip this step and immediately fill the vegetables with tomato juice.

Add tomato paste. While stirring, cook the soup on low heat for about five to seven minutes, avoiding a strong boil.

At the end of cooking straighten salt and acid. If the soup turned sour, add sour cream or cream and bring to a boil again. How to boil - immediately remove from heat, otherwise sour cream may curl.

Serve tomato soup hot by adding grated cheese and a pinch of black pepper to the plates.
