Squash cake with tomatoes
Despite the fact that zucchini is a budget product, you can make decent dishes from them. For example, zucchini cake according to the recipe from the photo step by step with tomatoes, which is able to decorate the holiday table.
Required Products:
For pancakes:
- zucchini - 2 pcs. (500-600 g);
- chicken eggs - 2 pcs .;
- wheat flour - 150 g;
- starch - 1 tbsp. lodges .;
- milk - 300 ml;
- vegetable oil - 40 ml;
- salt - 1/2 ch. box .;
- dried garlic - a big pinch;
- Provencal herbs - 1 hour lodges .;
- sugar - 1 tsp;
- Dill greens - 1/2 bunch.
For filling:
- mayonnaise - 200-250 ml;
- tomatoes - 3-6 pieces;
- garlic - 3-4 cloves;
- hard cheese –60– 80 g;
- parsley
How to cook squash cake with tomatoes
Zucchini rinse and cut the end. Rub on a coarse grater along with the peel. If you use too ripe fruit, it is better to cut off the peel and remove the seeds. Salt a little and set aside so that the squash mass "pours" juice.
In a separate bowl, prepare the pancake dough. To do this, mix eggs, salt, sugar, dried garlic and Provencal herbs.
Add milk and whisk with a whisk to make the mass homogeneous.
Combine the wheat flour and starch with the other ingredients. Mix thoroughly with a whisk until smooth.
Pour in vegetable oil, preferably odorless.
In the resulting mass, add the squash mixture with liquid (juice), and chopped dill. Again, mix everything thoroughly and leave the squash dough for pancakes for 5 minutes "to rest." The dough should be a little thicker than a pancake.
Fry the pancakes in a hot skillet: pour the soup ladle and spread it over the bottom of the pan. When one side turns red, turn the pancake over to the other side. To bake well pancakes, cook over medium heat. Tip: it is better to grease the original pan with vegetable oil so that the first pancake does not turn out to be “lumpy”. In the future, this is not necessary.
While the pancakes are cooling, prepare the filling. To do this, mix mayonnaise with chopped garlic.
Hard cheese rub on a medium grater and divide into two parts. Combine one of them with mayonnaise and mix well. Put the rest of the grated cheese to decorate the cake.
Put one pancake (cooled down!) On a flat dish and grease with mayonnaise paste.
Rinse the tomatoes and cut into cubes. Spread the slices of tomato over the surface. Cover the next pancake. Tip: if desired, tomatoes can be cut into slices, but when cutting the cake can be difficult. Therefore, the variant with slices of tomato is the most optimal.
“Assemble” the cake using all the zucchini pancakes and stuffing. Grease the whole surface with mayonnaise.
To hide the bumps, sprinkle grated cheese on the zucchini cake. Decorate at will.
Before serving, squash cake with tomatoes should stand in the refrigerator for at least 40-60 minutes. Enjoy your meal!
