Cucumbers with onions and carrots for the winter

Vegetable salad

We offer you the recipe of cucumber and tomato vegetable salad for the winter with onions and vegetable oil. Delicate snack of fresh vegetables in a spicy marinade is perfect for any side dish.

Cooking time: 30 minutes. Servings: 3 jars of 1 l.

Salad products:

  • cucumber - 1.5 kg;
  • tomato - 1.5 kg;
  • onions - 3 pcs .;
  • garlic - 10 teeth;
  • sunflower oil - 3 tbsp;
  • black pepper peas - 8 pcs .;
  • black allspice - 8 pcs .;
  • water - 0.9 l;
  • granulated sugar - 2 tbsp;
  • table salt - 1 tbsp;
  • Table vinegar essence 70% - 1 tbsp.

The process of cooking vegetable salad

To begin with, carefully wash the tomatoes, dry them out of moisture, remove the stalks, cut them into medium slices and put them in a cup.

After that, wash the cucumbers, cut into medium pieces and put to the tomato. In advance, you need to pour cucumbers with cold water and leave to soak for 2-3 hours so that the fruits are clean of dirt. For the preparation of the salad we recommend to choose short-cucumbers with barbed skin. Use sweet cucumber varieties. Do not forget to cut the ass in a cucumber.

Peel the onions from the husk, cut in halves, put to the rest of the ingredients, mix.

Then we spread the cut vegetables tightly to each other in a sterilized container. Add peas allspice and black pepper and garlic slices. Sterilize the containers over the steam for a few minutes until the last drop of liquid has evaporated. At the bottom of the jar you can put a piece of horseradish, mustard seed, coriander and bay leaf. As an additional component, you can use a carrot.

Begin to prepare the pickle for a snack of cucumbers and tomatoes. Pour vegetable oil, table vinegar essence, table salt and granulated sugar, sweet peas and black pepper into the pan. Thoroughly mix the marinade, put on a minimum heat and bring to a boiling state. Cover the jar with a saucer and put it in the microwave for 2 minutes.

Immediately close the seamer, turn over the jar and check for leaking marinade. Wrap a towel and put to cool for a day. To prevent the bank from bursting, we recommend placing a half folded towel under the bottom. Store vegetable snack in a cold room.
