How to cook salted watermelons in jars

To begin with, we select a ripe elastic watermelon, cut into small pieces of 2-3 cm, peel the seeds. For salting, buy watermelon from trusted sellers to make sure that the fruit is grown naturally without the addition of pesticides and nitrates.

It is preferable to salt the berry with the peel without damage. We put it in a washed and sterilized three-liter container not tightly so that the pieces do not fall apart. Fill the jar to the level of the top side.

Pour cold filtered water into an aluminum pan, bring to a boiling state, pour chopped watermelons in a jar, leave the fruits to boil for 15 minutes.

Then we put on a special nozzle and carefully pour the water into the saucepan. After we add coarse salt, crystalline sugar, mix, bring the mass to a boil over low heat. Fill the jar with hot brine to the top, cover with a lid and put in a saucepan with warm water to be sterilized for 20 minutes.

Instead of granulated sugar, bee honey or fruit sugar can be used. For aroma, you can add clove buds, nutmeg, mint / lemon balm leaves, ginger root, lemon / orange slices.

Carefully remove the jar from the pan with warm water, put on a cloth and immediately roll up the scalded metal lid. After we turn it upside down and wrap it in a warm terry towel / cotton blanket. Leave the rolled up jar to cool for a day. Store pickled watermelon in jars in a dark, cool place.
