Salad Salad "Mother-in-law's tongue" of cucumbers for the winter - a spicy and piquant appetizer of fresh cucumbers in a tomato sauce. Thanks to the recipe with step by step photos, you can easily close a couple of jars without sterilization. But you need to observe cleanliness during the preparation process, and then wrap the blanks warm and leave for a while.

It will take 45 minutes to cook. From the ingredients indicated in the recipe, you will get several half-liter cans.

Ingredients:

  • cucumber - 2.5 kg;
  • tomato - 1 kg;
  • Bulgarian red pepper - 700 g;
  • garlic - 3 heads;
  • chili pepper - 2-3 pods;
  • salt - 30 g;
  • granulated sugar - 150 g;
  • apple cider vinegar - 120 ml;
  • olive oil - 200 g.

Cut the tomatoes in half, remove the stalks, cut into cubes. We send chopped tomatoes into a blender bowl or pass through a meat grinder.

Sweet red bell peppers are cleaned from seeds, washed with running water. Cut the flesh coarsely, add to the tomatoes. Chili pods cut into rings with seeds.

Slices of garlic, crush with a wide knife, peel off the husks, add crushed garlic to pepper and tomatoes.

Grind vegetables until smooth. Instead of a blender, you can use a meat grinder.

We cut small prickly cucumbers into slices about 3 millimeters thick. Cut the cucumbers diagonally so that the slices look like a sharp tongue. Put the chopped cucumbers in the pan.

Next, pour olive oil into a pan with cucumbers, add vegetables chopped in a blender, pour apple cider vinegar, pour sugar and table salt.

We put the pan on the stove, close the lid, bring to a boil over moderate heat. Boil for 20 minutes.

Cans and lids are thoroughly washed with warm water and soda, rinsed with boiling water, sterilized over steam or dried in the oven at a temperature of about 110 degrees 10-15 minutes.

We pack the boiling salad into jars, close it tightly, turn it down with its neck on the lid and cover it with a thick woolen blanket or blanket. We leave it warm for 10-12 hours, then we put it in storage in a cold cellar.
