Wash vegetables, peel, cut into slices and scroll through a meat grinder. Then we refill with salt, you can add a little sugar so that the taste becomes more saturated, contrast and pour in vinegar - it will not be felt, but will prevent the adzhika from souring. If you want to make the seasoning thicker - choose fleshy tomatoes or after cooking, strain excess liquid. Adjust the sharpness of raw adzhika by adding chilli and garlic. For lovers of hot spices, take as a basis the proposed recipe, but if you like softer ones, reduce the amount of hot pepper. The raw adjika is kept cold. Empty the shelf for her in the fridge - and throughout the winter you will enjoy delicious fresh vegetable sauce.

Ingredients:

  • ripe fleshy tomatoes - 500 gr;
  • red sweet pepper - 2 large;
  • hot pepper pods - 2 pieces;
  • garlic - 2 heads;
  • salt - 0.5 tbsp. l;
  • Vinegar 9% - 1 tbsp. l;
  • sugar - 1 tsp (optional).

How to cook raw adjika for the winter without cooking

Choose ripe tomatoes, even overripe - one of them will make the most delicious adjika. Fleshy varieties to use or juicy - a matter of taste. Cut the tomatoes in half, remove the stalk.

Sweet pepper is desirable to take a fleshy, juicy. Cut into slices, throw away the stem. We free the pods of hot pepper from the seeds - so the taste of adjika will not be very hot. If you want to make a very spicy seasoning - twist the pepper along with the seeds. Clean and rinse the garlic.

Put the prepared vegetables in portions in a meat grinder, grind, scrolling once.

Add a spoonful of table vinegar 9% vinegar to vegetable gruel or pour in one and a half spoonful of fruit 6% strength.
