To prepare spicy eggplant you will need:

  • eggplant - 0.5 kg;
  • carrot - 150 g;
  • garlic - 1 head;
  • vegetable oil for baking.

For marinade:

  • water - 125 ml;
  • salt - 0.5 tbsp. l .;
  • vegetable oil - 25 ml;
  • vinegar - 70 ml;
  • sugar - 50 g.

How to marinate delicious eggplant with carrots

It is best to take young, small eggplants to prepare this snack. They must be washed well and cut off the tail.
