Butterflies are popular and healthy edible mushrooms whose appearance justifies their name. An oily film is visible on the hat, which is needed to protect the fruit body from drying out. Garbage, needles, and foliage easily clings to such a film, and therefore cleaning the oil often causes difficulties. There are several ways to clean the oil that speed up the processing and preparation of the harvested mushrooms.

Species features and benefits
Despite the fact that there are many types of butter, they are all very similar to each other. The smooth leg has a cylindrical shape, the flesh can be light yellow or white-gray. If you cut or break the latter, it may turn blue or redden.
The cap of young organisms has the shape of a hemisphere, but becomes flatter with age. Both the hat and the leg are eaten. A sign by which it is possible to distinguish a nipple is a tubular-shaped hymenophore. The tubes located on the back of the cap help to distinguish the oil from the poisonous fruiting bodies.
Large accumulations of these mushrooms are most often found in coniferous forests. They grow, as a rule, in open areas, well-lit by the sun, on moss, old needles and sandy soil. They are not found in places with open ground, where there is neither grass nor bushes. Harvest time is May-October.
Oil mushrooms are often used in cooking, due to their high nutritional qualities, high content of nutrients, fiber and amino acids. The body absorbs the latter by 80%. Younger organisms are richer in amino acids than older ones. Oil mushrooms are also rich in salt of potassium, iron and phosphorus, and contain vitamins such as A, B and B1, PP, C. The beneficial effect on the human body is manifested in the prevention of headaches and the treatment of gout.
Preparing oil for cleaning and hand precautions
Before cleaning, you need to determine the subsequent cooking method. For drying, for example, it is not necessary to remove the oily film. It will be sufficient to remove debris from the cap and fruit body with a stiff brush.
If a subsequent heat treatment of the product is planned, the product is completely cleaned of the sticky film. Before removing it, the mushrooms must be thoroughly washed in water several times to completely remove sand and debris from the surface of the product.
It is advisable to rinse the mushrooms and begin to clean them as soon as possible after harvesting. Collected oil can be stored in the refrigerator for up to 12 hours without packaging. If you pack them and refrigerate them, they will not be suitable for cooking as soon as they get warm from the cold.
How to quickly and efficiently peel mushrooms from the film?
To quickly clean the oil from the mucus of the film, you must remember that only dry mushrooms can be cleaned. If you pre-soak them, they will absorb liquid, and the mucous membrane will swell. Dry fresh mushrooms. If they were collected in wet weather, leave them laid out on paper for a couple of hours to allow them to dry.
With a knife
Knife cleaning can be carried out even at the collection point if the weather is not too humid.Take a knife with a sharp blade, pick up the edge of the film and pull.
It must be taken into account that the film must be removed from the edges of the hat so as not to damage the smooth surface of the mushroom. It is easy to clean the freshly picked oil in this way. If the weather is wet, remove the film with a knife only at home, after drying.
Without a knife
To properly remove the film, you can break the hat into two parts. On the fault that appears, the edges of the film can be seen, for which you can pull. This method is simpler than cleaning with a knife, but using it, you can’t cook the whole mushroom.
Using boiling water
In order to use this method, divide the mushrooms into several portions. Place a pot on the stove and wait for the water to boil. After, put the mushrooms in a colander one serving, and keep it over boiling water for 30 seconds.
You can dip the mushrooms in a colander for a couple of minutes in boiling water, and then quickly rinse them with cold water. After this procedure, the skin is removed very easily.
Using vegetable oil
Prepare a clean cloth and soak it in vegetable oil. Wipe all mushroom caps, gloves and a knife with this cloth. With the tip of the knife you need to pick up the film and slowly pull it towards you. So it will be removed easily and will not tear, and the hat will remain smooth. If the film is still torn and peeled unevenly, carefully scrape off the remains with a knife.
Dry sponge cleaning
A kitchen sponge helps to get rid of the film very quickly, not only on old but also on young mushrooms, from which it is difficult to peel. Rub the surface of the cap with a dry, clean sponge. It is better to use the hard side of the sponge. Rub the hat carefully so as not to break it.
other methods
There are no less effective ways to remove the skins from the surface of the hats. Among them there is cleaning with gauze and vinegar. To implement the first method, firmly, but gently press a piece of gauze to the hat. The oil film should adhere to the gauze. After that, sharply pull the edge of the fabric. Gauze can be replaced with a paper towel.
For the second method, you need 5 tablespoons of vinegar per liter of water. Boil the water, add vinegar to it and dip the mushrooms in boiling water, putting them in front of this in a colander with the caps down. Hold the mushrooms over boiling water for no more than 20 seconds. After that, you can start peeling off the skin. Acetic acid not only facilitates the processing of the hat, but also helps to quickly get rid of adhering debris.
No less effective oil can be cleaned with salt. To do this, prepare a solution of 200 g of kitchen salt per liter of water. Soak the product will be possible only after peeling. Soaking will contribute to the opening of the pores of the fungus, and as a result, its more thorough cleansing.
Frequently Asked Questions
Hands should be kept in such a solution for no longer than 5 minutes, and after completion of the procedure, wash them with soap and spread with a rich nourishing cream. If the spots are not very bright, you can use soda or laundry soap. More effective but not recommended methods are cleaning hands with acetone or gel to remove fuel oil.
Some gourmets, on the contrary, prefer food with bitterness, so the question of whether to clean such mushrooms is a matter of taste. However, it is recommended to remove the film to avoid digestive upsets. Young oils do not need such treatment at all: their film is very difficult to remove, and it does not give bitterness to food.
Lubricants are a product that, with proper and timely processing, has very high palatability. After preparation, they can be used in cooking in fried, dried and pickled form.

Elementary. Mine bring me to the garden a few baskets of mushrooms. I’m cleaning, sorting, the first ones - I put the russules in heaps - just boil and salt in a jar in the cold, separate all the milk, also boil and clean easier under running water, add salt to the oppression, then white birch bark and scrub the legs - and then whoever wants what - I often form packages for freezing, but the last thing it comes to is oil) And while they were waiting, they had films on their hats dried) And at once it’s easy to simply clean with your fingers without any bells and whistles)) I marinate them weak spin spin marinade small, expensive mushroom pickers) and advise you - yummy)

I am always struck by mushroom pickers who carry mushroom garbage from the forest home. I take some hats of all kinds of mushrooms. the legs of the mushrooms are not edible; there is pure fiber. Fiber is not digested by the body - this is pure ballast that the body does not need. As a child, our grandmother categorically forbade bringing garbage in the form of legs from the forest. And I clean the oil in the forest. For mushrooms I have a wicker basket with two compartments, for butter separately. And it amazes me how old and wormy mushrooms drag mushrooms. No wonder they are etched.
