Delicious tomato juice for the winter
Tomato juice, prepared at home for the winter, is a very tasty juice. Tomatoes are selected for him the most ripe, without damage and decayed areas and necessarily delicious: sweetish, juicy with a slight acidity. If the tomatoes are not ripe or ripe - you can’t make good juice from such tomatoes, they will only work for a tomato or sauce. Tomato juice is prepared in different ways: tomatoes are crushed with a blender, rolled through a meat grinder, boiled slices, the juice is boiled for a while or sterilized by cans, harvested with pulp, rubbed through a sieve so that the juice is uniform, without pieces of skin and seeds. The easiest way is to mash, then rub through a sieve and boil the juice. Neither vinegar nor sterilization is necessary for this prefab - tomatoes have enough acid, which will be a natural preservative.
Ingredients for Tomato Juice:
- ripe juicy tomatoes - 1 kg;
- salt to taste;
- Provencal herbs - 0.5 tsp;
- ground black pepper - 3 pinches.
Making delicious tomato juice
Peel the tomato is not necessary to remove - when we wipe the mashed potatoes, it will remain in a colander. We cut the tomatoes into slices, remove the white areas.
We shift portions into a blender, grind into a thick mashed potatoes. Grind tomatoes well so that there is as little waste as possible. Pour into a colander with small holes or a sieve.
Wipe with a spoon, leaving only pieces of peel and seeds. After each serving of tomato puree, rinse the colander, otherwise it will be difficult to wipe.
On high heat, let the juice boil. As soon as boiling begins on the surface, a magnificent cap of foam is formed. You can collect it, but in just a few minutes the foam will begin to subside and disperse.
We boil the juice for ten minutes with moderate heating, preventing it from boiling violently. If you want to make the juice fragrant, add Provencal herbs and a little ground pepper. Or leave it natural without additives.
Salt the juice to taste, cook another one or two minutes so that the salt crystals dissolve.
From a kilogram of tomato, 700-800 ml is obtained. Tomato juice - select jars based on the availability of tomato. Sterilize containers in advance, boil the lids. Pour boiling tomato juice into hot jars, screw the lid with thread or roll up the machine.
