Tomatoes in the snow with garlic
This recipe got its name “tomatoes in the snow” as it is cooked with garlic, which in a jar really resembles snow. To taste the tomatoes are slightly sweet with a piquant note.
The cooking process itself is so fast that you won’t even notice how everything will be ready, and step-by-step photos will simplify it even more.It is better to take tomatoes ripe, resilient and small in size so that more fruits fit in the jars. The weight of tomatoes can vary, depending on their size.
A very important observation and advice: take garlic only homemade, since the one that is sold in supermarkets will immediately turn into blue-green jars, which will not look like snow at all. Although it does not affect the taste and quality of the workpiece for the winter.
The number of components is indicated on a 2 liter can.
Ingredients:
- tomatoes - 1300 grams,
- water - 900 milliliters,
- garlic - 5 cloves,
- sugar - 100 grams
- vinegar (9%) - 1.5 tbsp. l.,
- salt - 25 grams.
How to cook tomatoes in the snow
Rinse the tomatoes well and pierce three times with a toothpick in the place where the peduncle was. Thanks to these punctures, the tomatoes do not crack from boiling water.
Sterilize the jars for five minutes each, and boil the lids. Place tomatoes tightly in jars to the very edge. Pour boiling water, cover and leave for 20 minutes.
Peel a medium-sized garlic head and grate cloves on a medium grater. For one jar, you get about 1 tbsp. l with a hill of grated garlic.
I don’t advise you to push through the garlic, as there will be no snow effect.
Drain already warm water from the cans into the washbasin; it will no longer be needed. And add grated garlic and vinegar to the tomatoes.
Prepare the marinade with fresh clean water. Add salt and sugar to the water, boil and let it boil for two minutes. With this boiling marinade, pour the tomatoes to the very top and tighten the lids. Turn the cans upside down and wrap them in a warm blanket or coverlet. Leave it like this for a day.
