Fragrant spicy basil fits perfectly not only in everyday salads of fresh vegetables, but also in the preparations for the winter. Leaflets and twigs of this spice are added to jars when preserving cucumbers and tomatoes, eggplant, zucchini, adjika, and various sauces. Very tasty and fragrant are tomatoes with basil for the winter. This recipe has a minimum of ingredients, for the marinade only citric acid, salt and sugar are used, and tomatoes are prepared without sterilization, by double-pouring. The cooking process is very simple and quick, as you can see by reading the step-by-step photos.

  • water - 1 liter

How to harvest tomatoes with basil for the winter

For pickling in small jars, it is better to take medium-sized tomatoes of late varieties with dense skin. We cut off the stalks, rinse the tomatoes two to three times with cold water. We check for spots and damage, defective specimens are put off.

We tear the leaves and twigs of the purple or green basil with our hands, put them on the bottom of the jar (the whole basil does not give off its aroma so quickly). Add chopped cloves of garlic, allspice, peas of black pepper.

Filling all the jars, boil water at the rate of about half a liter of water per liter jar. But it is better to boil with a margin so that you do not have to wait until the water boils again.

Drain the cooled water, measure how much happened. If less than a liter, add more water for easy conversion of proportions. Pour salt with sugar and citric acid.
