Winter mustard tomatoes
You can prepare tomatoes with mustard for the winter in several ways, but this recipe is just “lick your fingers”. In the photo they look appetizing and turn out really tasty.
You can make a pickle or marinade with the addition of mustard powder, mustard paste or white mustard seeds. The first and second options are more suitable for pickling tomatoes in a bucket. In banks, however, not everyone likes the unclear marinade because of sediment and suspensions, although it tastes more saturated and spicy. If you add mustard seeds, then the marinade will remain transparent, its taste will be softer, but also saturated. For pungency, you can put black mustard seeds (they are very small, slightly larger than poppy seeds and have a hot, sharp taste) or half a pod of chili.
Ingredients:
- tomatoes - 1 kg;
- white mustard seeds - 1 tbsp. l;
- peppercorn rings - 3-4 pcs;
- parsley and celery greens - 2 branches each;
- black and allspice - 2-3 pcs;
- clove buds - 3 pcs;
- garlic - 2 cloves;
- water - 1 liter;
- sugar - 3 tbsp. l;
- table salt - 2 tbsp. l;
- table vinegar 9% concentration - 2 tbsp. l in each liter jar.
How to cook mustard tomatoes for the winter
We wash the prepared tomatoes, if the skin is thin - we prick with a toothpick so that it does not crack when pouring boiling water.
Thoroughly wash liter jars with soda or detergent. We also prepare lids. Put greens, garlic cloves and pepper rings in each jar.
Pour peas of allspice and black pepper. Add the clove buds (if you don’t like its aroma - exclude it).
We measure the right amount of mustard seeds, pour into a jar. If there is black mustard, add a quarter of a teaspoon - this will be enough to make the marinade sharp.
We fill the jar with tomatoes, tightly packing vegetables, but do not crush. Boil water in a bucket, do the first fill. Calculation of water - per liter can of about half a liter of liquid.
After 15 minutes, remove the lid, close the nylon jar with holes and decant the water. Add salt and sugar, boil the marinade again.
In each can of one liter, pour two tablespoons of vinegar.
Fill with boiled marinade, tightly roll with a machine or screw with screw caps.
Wrap the tomatoes in a blanket or hide in a blanket, pillows and leave to cool slowly. After a day, when the jars have cooled, you can clean them for permanent storage in a shaded place.
