Tomatoes with onions for the winter
Tomatoes are harvested chopped or whole. The first option is suitable if the tomatoes are dense, fleshy, large - these can be cut in half or in four, without fear that they will lose their shape. If the tomatoes are juicy, with a thin skin or small, it is better to leave them whole, layering with onions and herbs. Tomatoes with onions for the winter according to this recipe with a photo - you just lick your fingers.
It is more convenient to cut onions into strips or slices, and add garlic and peas of allspice to the marinade for a rich taste. If you want to give the tomatoes a slight spice, add a few rings of chili pepper to the standard set of spices. Tomatoes with onions are prepared without sterilization, by double pouring: first with boiling water, then with marinade.
Ingredients for Tomatoes with Onions:
- medium-sized tomatoes - 1 kg;
- onions - 2 pcs;
- garlic - 4-5 large teeth;
- black and allspice - 4-5 pieces;
- parsley branches - 6-8 pcs;
- water - liter;
- salt - 1 tbsp. l without a hill;
- sugar - 2.5 tbsp. l;
- vinegar 9% - 50 ml.
Cooking Tomatoes with Onions
We select medium-sized ripe tomatoes for marinating. So that the skin when pouring boiling water remains intact, does not burst, we poke it in several places with a toothpick.
At the bottom of the jar we throw parsley (you can chop the greens or leave the branches whole), chopped onions in half rings or julienne.
Pour peppercorns, throw a few plates of garlic.
We lay the tomatoes up to about half the jar, shaking, so that they lie more tightly. Pour onion, garlic, herbs, fill to the top.
We boil water at the rate of half a liter per liter can of tomatoes. Pour jars of tomatoes with boiling water under the very neck. Put the lid, leave to steam for ten minutes.
Strain the water using a nylon cap with holes or holding tomatoes with a spoon. Add salt and sugar to the drained water.
We boil the marinade over high heat for several minutes until the crystals of salt and sugar dissolve. Pour in the vinegar.
Fill the cans with boiling marinade, screw with threaded lids or seal with a seaming machine.
Covering with a warm blanket, leave the tomatoes to cool until the next day. We take out the cooled workpiece into the basement, cellar or put it in the pantry. Good luck with your workpieces!
