How to prepare Atlant salad with beans for the winter

At night or in advance for 5-6 hours, soak the beans in plain water. Fill completely so that water covers all beans from above. During the night, almost all the water is absorbed and the beans are boiled much faster. We wash the beans several times and if the water still remains, then drain it.

We transfer the beans to a cooking bowl and pour cold water, approximately 1: 3. We use 1 part of beans and 3 parts of water. Cook the beans until soft, do not salt it and do not do anything with it. After 40-50 minutes, the beans will become soft, and we remove it to the side. We drain the water if it remains after cooking.

Wash the tomatoes and twist through a meat grinder, it turns out a thick mashed potatoes for the salad.

We grind the remaining vegetables: three carrots on a grater, onions and peppers with small sized cubes.

Mix in a pan all the ingredients: beans, carrots, onions and sweet peppers. Salad and add a little granulated sugar. We put salt either 1 full dessert, or a tablespoon without a slide. Mix the salad.

Add tomato puree, vegetable oil and set to stew on the fire. First we set the power to maximum so that the salad boils as soon as possible, then we turn it down to medium power and simmer for 35-40 minutes. 5 minutes before cooking, pour in 9% vinegar and mix. Let the salad boil again, cook for 5 minutes and turn off the heat.

We sterilize glass jars in advance, let them cool and dry. Also pour boiling water over the lids for seaming. Hot salad we fill the prepared container.

We roll tightly with covers: we use either screw or turnkey iron. We put the finished salad to cool under the "fur coat", and after a couple of hours we transfer it to the pantry, where the banks will stand on shelves all winter. Good appetite!
