Solyanka from cabbage with mushrooms is a tasty and original preparation for the winter. The recipe for it is very simple - chop vegetables, add boiled forest mushrooms and seasonings, simmer, put into jars and sterilize.

This dish is suitable for garnish with meat or chicken, and on fasting days it is eaten with bread or porridge - it turns out so delicious that you just lick your fingers!

It will take 60 minutes to cook. From the ingredients indicated in the recipe, you will get several half-liter cans.

  • white cabbage - 2 kg;
  • forest mushrooms (chanterelles, boletus) - 500 g;
  • red onion - 250 g;
  • carrots - 300 g;
  • tomatoes - 500 g;
  • chili pepper - 2 pcs.;
  • vinegar 9% - 70 ml;
  • sugar - 50 g;
  • table salt - 20 g;
  • vegetable oil - 120 ml;
  • black pepper, bay leaf.

How to cook a cabbage soup with mushrooms

We clean red onion, cut into thin half rings, fry in warmed vegetable oil for several minutes.

Forest mushrooms must be sorted, cleaned, thoroughly washed and boiled until cooked. After boiling, it is desirable to drain the first water, pour mushrooms with fresh boiling water, cook for 1 hour.

We boil the boiled forest mushrooms into a colander, then chop. Add chopped mushrooms to cabbage and carrots.

Ripe red tomatoes cut into cubes. Peeled chili peppers from seeds, cut into rings.

Add chili and tomatoes to the rest of the ingredients.

Pour sugar and salt, pour 9% vinegar, cook over medium heat for 45 minutes. At this stage, the dishes should be covered with a lid.

In cleanly washed and dry cans we pack up a hot hodgepodge, close tightly.

At the bottom of a deep pan we put a towel, put jars of hodgepodge, pour hot water so that it reaches the shoulders of the jars. We sterilize 25 minutes after boiling (capacity up to 500 ml). Preparations with mushrooms must be sterilized!

After cooling, remove the workpiece in a cool place. Storage temperature from +2 to +10 degrees Celsius.
