Donskoy salad for the winter with red tomatoes and cucumbers is a delicious vegetable mix that will remind you of a hot summer in cold winter. Make harvesting from fresh vegetables collected from the beds on the eve of cooking. The best season for the preparation of Don salad - late summer or autumn. At this time of year, the vegetables are the most delicious, because they have ripened in the open ground under the bright sun.

Ingredients:
- red tomato - 500 g;
- cucumber - 500 g;
- carrots - 350 g;
- Bulgarian pepper - 300 g;
- onions - 150 g;
- apple cider vinegar - 20 ml;
- table salt - 10 g;
- sugar - 10 g;
- paprika - 8 g;
- vegetable oil - 30 ml.
How to cook a salad "Donskoy" with tomatoes and cucumbers
Peeled onion peeled onions are cut into not very thin rings, so that during subsequent processing the rings keep their shape.
Red, slightly unripe tomatoes wash my, cut the stalk. We cut tomatoes in half centimeters thick circles.
Fresh cucumbers soaked in cold water, carefully wash, trim the tips. Cut cucumbers into circles, the same thickness as tomatoes.
We clean the carrot with a vegetable scraper, rinse thoroughly with running water and rub it on a large vegetable grater.
Red paprika (thick and fleshy) cleanse the seeds, cut into thick rings.
Put the chopped vegetables in a bowl or a deep pan, sprinkle with salt and sugar, add paprika flakes and pour vinegar. We grind vegetables with seasonings.
Put the load on top, leave for 2.5 hours so that a lot of vegetable juice stands out.
Banks wash, sterilize or dry in the oven. Tightly lay the vegetables in the banks, not reaching the shoulders 1-2 centimeters. Then pour the resulting vegetable juice so that the juice reaches approximately the shoulders.
Then pour a tablespoon of calcined vegetable oil in each jar.
Put the salad in a pan filled with hot water. Sterilize jars with a capacity of 500 ml for 25 minutes. Tightly corked. Cooled blanks remove in a cool place.
