Best of all, the taste of summer fruits and berries can be preserved until winter by canning in their own juice. This method of harvesting is also great for plums - the fruits are juicy and bright, almost like fresh. The recipe does not use additional liquid, so the taste of plum slices is concentrated. In winter, for cooking, you can use not only canned fruits, but also the syrup remaining from them, it comes out very tasty and quite thick.

We suggest that you learn the method of preserving fragrant plums for the winter without using sterilization. Components are designed for 1 liter can.

Almost any sort of plum is suitable for this preparation, the main thing is that the fruits are exclusively juicy, because they will be preserved in their own juice, without adding liquid. For this reason, "green" plums will not work, but it is not advisable to use overripe plums - neat plum slices will simply ferment, lose their shape.

Select whole, not damaged, strong fruits. Wash the plums thoroughly in cold water.

Divide each plum in half, along the groove. To make the halves neat, use a knife to separate the fruits. Throw the bones.

Fold the plum slices in a heat-resistant container with a thick bottom.

Sprinkle each layer of plums with sugar. Cover the container with gauze folded in several layers and leave at room temperature for 5-6 hours.

Juice will gradually stand out from the plums, which will mix with sugar. To make the juice discharge more even, periodically open the plums and shake the container slightly. So the halves of the fruits will be gently mixed without deforming.

When the sugar grains are completely dissolved, you can proceed to the further preparation of preservation. Immediately prepare the jars. The indicated volume of products is designed for 1 liter of workpiece, that is, 1 liter or 2 half-liter cans are required. Wash containers and sterilize in any convenient way. You can do without sterilization, several times having poured cans with steep boiling water. The lids must be boiled or rubbed with alcohol.

Put a container with plums and juice on the stove, light a minimum fire. Bring the syrup to a boil and boil for 1 minute, add citric acid at the end of the preparation. It is not advisable to mix the halves of the drains so that they do not lose their shape, you can swing the dish from side to side so that the fruits are evenly warmed up.

Seal jars with sterile lids, turn over, wrap preservation with a thick blanket. When the workpiece has completely cooled down (usually after 10-12 hours), transfer it to a cool, dark place where it will wait for winter.
