Squash caviar

Zucchini caviar is the most famous dish of this vegetable in Russian and Ukrainian cuisine. This is a healthy and satisfying dish that does not harm the figure, but perfectly satisfies the feeling of hunger. But many hostesses do not know how to achieve the famous taste of factory squash caviar. Caviar from zucchini with slices for the winter according to the recipe - you will lick your fingers, and it very much resembles that famous taste, but it does not contain synthetic additives harmful to human health.

To cook zucchini caviar, you will need:

  • fruits of zucchini - 1000 g;
  • carrot - 200 g;
  • onions - 300-350 g;
  • tomatoes - 250-300 g;
  • vegetable oil - 50 g;
  • salt and sugar to taste.

From such a quantity of products, two half-liter cans of squash caviar will turn out and a little will be left for testing.

Making caviar from zucchini slices

We peel the skin from the carrots, wash and cut into small pieces.

Cut carrots

We heat vegetable oil in a deep and capacious frying pan. We send carrots there, cover with a lid and fry over moderate heat. We peel all the onions from the husks, rinse, cut, and then pour them into the carrot. Do not forget to mix and cover the pan.

Cut onion

Wash and peel the tomatoes. To do this, it is enough to make a few punctures with a toothpick or cuts with a knife and douse the fruits with boiling water and lower them into cold water.

After that, the peel is removed without much effort. Finely chopped peeled tomatoes and set aside for now.

Chop tomatoes

We pass to the main ingredient - my zucchini and cut the stalks. Then cut into small cubes and send to the pan to the carrot and onion.

Zucchini diced

Salt everything, add a little oil and simmer for five minutes. Next, add the tomatoes and let the vegetables stew for another five minutes. Add salt, sugar.

Stewing vegetables

We scatter on sterile jars and additionally sterilize in a saucepan for about a quarter of an hour.

Sterilization cans

Then roll the eggs with the lids.
