Marinade for cucumbers per liter of water
Today we will prepare the marinade for cucumbers, the recipe is designed for 1 liter of water. This amount is enough for two jars of one liter. The cucumbers in it turn out to be strong, crunchy, sweet and sour, the taste of spices and light pungency are well felt in them.
We preserve small cucumbers whole, and if you get bigger, then it’s better to cut them into pieces - then the jar will be tightly filled and the cucumbers will be evenly marinated. You can use chopped cucumbers in the same way as whole ones or add to salads and snacks. You can change the set of spicy additives to your taste: instead of celery, put parsley, add bay leaf, remove hot pepper or vice versa - increase its amount.
Ingredients:
- whole or sliced cucumbers - how much will fit in a jar;
- celery greens - 2 branches;
- an umbrella of dried or fresh dill - 1 pc;
- hot pepper - 2 rings;
- allspice - 4 peas;
- garlic - 2 cloves;
- table salt - 2 tbsp. l;
- sugar - 3 tbsp. l;
- vinegar 9% strength - 2 tbsp. l (one per can);
- water - 1 liter.
How to cook marinade for cucumbers
Regardless of whether the cucumbers will be preserved whole or chopped, we place them for several hours in cold water.
We fill the jar: at the bottom we put half the greens, dried dill, a ring of pepper and a clove of garlic. Put the cucumbers tighter, shaking the jar. Cover with greens on top, add pepper, garlic.
We prepare marinade for pouring and canning. In the ladle with boiling water, add salt (cooked non-iodized) and sugar. Dissolve.
Pour boiled cucumbers with boiled marinade. Cover with a lid, leave to warm for 10-12 minutes.
After draining the water back into the bucket, boil it again and refill again for ten minutes.
Drain the second fill, bring to a boil. If peas of pepper or spices fall into the water, we leave it, when boiling, they will better reveal the taste. Add vinegar at the rate of a tablespoon per liter jar.
Pour the boiling marinade into the jar without leaving any voids. Fill to the top, under the lid.
We roll cans with lids - you can use both standard tin cans for a seaming machine and threaded lids. Covering the jar with cucumbers with a blanket, allow to cool to room temperature and remove for long-term storage.
