Tomatoes with cabbage for the winter - you’ll just lick your fingers
One of the options for assorted vegetables is tomatoes with cabbage, a very tasty, simple and quick harvest for the winter. This recipe provides for the sterilization of cans, but despite this, preparing a snack is not difficult.
If desired, slices of sweet pepper, quarters of a small onion, slices of carrots can be added to the jar. Or mix cabbage with grated carrots, chopped onions, slices of pepper, and layered tomatoes with this mixture. In one jar, you will get a practically ready salad (when serving it remains only to pour oil) and delicious pickled tomatoes - you’ll just lick your fingers.
It is better to choose tomatoes not very large, fleshy, and take cabbage in autumn or autumn-winter varieties - it becomes juicy, sugary by the end of summer and is perfect for winter harvesting.
Ingredients:
- Tomatoes, cream, 700-800 gr.,
- white cabbage - 300-350 gr.,
- fresh dill - 2-3 branches (optional)
- Lavrushka - 2 leaves per can,
- garlic - 2 prongs,
- hot pepper - 1-2 rings (or several black peas),
- water - 1 liter,
- table salt - 2 tbsp. l.,
- sugar - 3 tbsp. l.,
- vinegar 9% - 1 tbsp. l
How to cook tomatoes with cabbage
We clean the cabbage from the grafted leaves, cut in half. Shred straw, as for first courses or salads. You can chop coarsely, but the jar will not be filled so tightly, and besides, not everyone likes pickled cabbage cut into pieces.
We wash the tomatoes, put off the crushed tomatoes (they will fit in juice or salads).
In a cleanly washed and scalded jar of boiling water we put a sprig of dill with herbs, we throw a lavrushka, garlic, a ring of hot pepper or a few black peas.
We lay some tomatoes, pour a handful of shredded cabbage, as in the photo. We seal the cabbage with a spoon or hand. Again, put the tomatoes, fall asleep with cabbage and so fill the jar under the top.
Pour a liter of water into the saucepan, boil. Pour salt with sugar, boil again until the spices are dissolved and pour in the vinegar.
After removing the marinade from the fire, immediately pour into the banks. For one liter jar, you will need about a glass of marinade, depending on the density of cabbage and tomatoes.
Covering with lids (without screwing), put the jar in a deep pan, placing a towel under the bottom. We sterilize for 15 minutes liter containers, 10 minutes 700 grams.
We take out one at a time and immediately screw or roll up the machine. We shelter, leave the jars for a day, after which we put them into storage in a dark, cool room. Good luck with your workpieces!
