Tomatoes in tomato paste for the winter
A very practical and economical winter harvest recipe - tomatoes in tomato paste. Pasta is much cheaper than juice or fresh tomatoes, and if diluted with water, you get concentrated tomato juice, which can be used in winter harvesting.
Tomato filling turns out to be sweet and sour, with a spicy aroma and it can be safely called the most delicious tomato fill. It can be an excellent base for gravy, sauces, it can be added to vegetable fry or thickened with flour and pour meatballs, meatballs, meatballs. There are two ways to make this blank. The first - with double filling, the second - with sterilization. The difference is that in the first version, the tomatoes are first poured with boiling water, and the second pouring is made from diluted tomato paste. If you will sterilize, pour immediately boiling pour and sterilize liter jars for 15 minutes.
Ingredients:
- tomatoes - 500-600 gr.,
- tomato paste - 3 tbsp. l.,
- water - 0.5 liters
- vinegar 9% - 1 tbsp. l.,
- sugar - 1.5 tbsp. l.,
- salt - 1 tbsp. l.,
- Lavrushka - 1-2 leaves,
- garlic - 5-6 cloves,
- peas peas - 6-7 pcs.,
- hot peppers - 1-2 rings,
- parsley or celery greens - several branches.
How to prepare tomatoes in tomato paste for the winter
We sort through the tomatoes, set aside with cracks, wrinkled, with spots. Dense ripe tomatoes are thoroughly washed with running water.
In a liter jar we put two or three branches of parsley or celery, bay leaf, a ring of hot peppers, peppercorns and garlic, as in the photo.
We fill the jar with prepared tomatoes, laying on the bottom those larger. Shaking the jar, we fill it to the edge, filling empty places with greenery. Pour boiling water for ten minutes, then pour this water. If you cook with sterilization, you can not pour tomatoes with boiling water.
In a ladle or a small saucepan, boil water for a second pour, add tomato paste. Dissolve, if the foam rises when boiling, collect it with a spoon.
After pouring boil for a few minutes, pour salt and sugar. Boil a couple more minutes.
Pour in the vinegar. A liter of filling needs a tablespoon of vinegar of 9% concentration. Turn off the fire.
Before pouring the fill into the jars, stir it so that no sediment remains on the bottom. Pour into banks to the very edge. We tightly twist or set to sterilize for 15 minutes (in this case, we do not roll up the jars, you need to close the lids after sterilization).
Cool the finished tomatoes by wrapping them in a blanket or towel, then we put them into storage in the basement or put them in the pantry. Good luck with your workpieces!
