Delicious zucchini salad with rice for the winter
Ingredients:
- tomatoes - 200 g;
- boiled rice - 300 g;
- sweet pepper - 2 pcs.;
- carrots - 1 pc.;
- onions - 1 pc.;
- zucchini - 250 g;
- vegetable oil - 30 ml;
- salt - 2 tsp;
- sugar - 1 tbsp;
- paprika - to taste;
- vinegar 9% - 1 tbsp;
- garlic - 1 clove.
How to make zucchini salad with rice
Prepare all the necessary ingredients on a list. Immediately take a deep pan with a thick bottom. Zucchini pick young, wash and dry them, cut into small cubes and put in a pan.
Choose ripe sweet tomatoes, wash and dry them, cut into small cubes. Put all the tomatoes in a pan to the zucchini.
Next, peel sweet pepper, remove all seeds and partitions, wash and dry, cut into small cubes, similar to other vegetables. Add pepper followed by tomatoes to the pan.
Peel the carrots and onions, wash the vegetables and dry them slightly. Cut the carrots into cubes, cut the onion into cubes or half rings. Add vegetables to the pan. Pour in oil and put the pan on a small fire, cover.
Stew vegetables under the lid for 20 minutes. After a while, add boiled rice to the pan.
Pour salt, pepper, paprika and sugar into the pan. Stir everything and simmer another 15 minutes.
At the end of cooking, add the garlic skipped in the press to the salad, pour in the vinegar. Shuffle and turn off the fire.
Arrange the salad in sterile jars and roll up immediately.
Put the blanks upside down, throw a blanket over and leave for a day. After a while, transfer the cans to the cellar or pantry.
