Cucumber salad for the winter
Cucumber salad for the winter “You'll lick your fingers” without sterilization with onions - an excellent solution if unexpected guests came to you. It can be eaten as a separate snack, or as a complement to hot dishes. It turns out such a preparation of delicious and very juicy. The vegetables used in its preparation are very friendly with each other and create a real culinary idyll. Salad does not need additional sterilization, just take a clean, sterile container.
The yield of the finished cucumber salad = 0.5 l.
Salad Ingredients:
- cucumbers - 3-4 pcs.;
- tomatoes - 2 pcs.;
- sweet pepper - 2 pcs.;
- carrot - 1 pc.;
- onion - 1 pc.;
- table vinegar - 1.5 tbsp .;
- granulated sugar - 1 tsp;
- kitchen salt - 0.5 tsp;
- sunflower oil - 50 ml.
Cooking Cucumber Salad with Onions
We prepare all the vegetables: thoroughly rinse, cut off the cucumbers noses, remove the core from the peppers, scrape the skin off the carrot, remove the husk from the onion. Next, we chop vegetables.
On a coarse grater we rub carrots.
We rub the cucumbers too.
Grind onions finely with a knife.
Bell pepper shred straws.
In a suitable bowl (you can take a pan with a thick bottom or a small cauldron) pour vegetable oil and pass the grated carrots along with onions. After a few minutes, add cucumbers and bell peppers to them. Stew vegetables for five minutes. During this time, peel the tomatoes. To do this, make a few punctures or cuts on the fruits and pour boiling water over it. We wash the tomatoes in cool water and remove the skin with ease. Now mashed the tomatoes with a blender.
Add the resulting mashed potatoes to the remaining vegetables.
After salt, add sugar and vinegar, simmer for about half an hour over low heat.
When the salad is cooked, sprinkle it in sterile jars and roll it up.
We drop the cooled preservation into the basement or put it into storage in the pantry.
