Cucumber salad with mustard for the winter - just lick your fingers
This recipe for cucumber salad for the winter with mustard, garlic and vinegar is called "Lick your fingers." And this is quite true - it turns out so delicious that it is impossible to resist and not take supplements. It is not difficult to cook it, but it is worth considering that it will take time to infuse the salad - the cucumbers are mixed with spices and put in the juice, in which they are then sterilized.
Salad Ingredients:
- 2 kg of cucumbers;
- 90 g of sugar;
- 1.5 tablespoons of salt;
- 90 g of vinegar 9%;
- 50 g of vegetable oil;
- 3 cloves of garlic;
- 0.5 coffee spoon black pepper;
- dill umbrellas - half in a jar.
How to make a cucumber salad for the winter
From the specified number of ingredients, 5 half-liter cans of salad are obtained. But it can turn out a little more (100-50 ml), if you cut the cucumbers large enough or not very tightly packed them in jars.
We carefully wash the cucumbers, cut off the tips and soak in cold water for 3-4 hours. If the cucumbers are just picked, you can not soak them.
Cucumbers are cut into pieces 3-4 cm long. Large can be cut in half along, and then into short pieces. For this salad, it is advisable to select cucumbers with medium-sized, unripe seeds (otherwise they will be felt, and the appearance of the salad will deteriorate).
We put cucumbers in a convenient container, add all the spices and seasonings, except for the dill umbrella, pour salt, sugar, put the garlic passed through the press, pour the vegetable oil and vinegar.
Mix and cover. Set aside for 2-3 hours. Every hour, gently mix the cucumbers.
During the infusion, cucumbers will release juice.
At the bottom of previously sterilized cans, put dill.
Then we lay out the cucumbers, trying to fill as much space as possible with them. The juice that has formed is evenly distributed over the banks. Juice will not cover the cucumbers completely, but it is not scary.
We send the banks for sterilization - in a convenient and large pan. Do not forget to put a special stand on its bottom or cover it with a thin towel so that the banks do not directly touch the pan with the bottom. This is necessary so that they do not burst. We sterilize half-liter jars for 15 minutes (liter - for 20 minutes) after the water boils in a saucepan.
When the sterilization time has come to an end, the cans can be pulled out and rolled up or tightened tightly if you use cans with screw caps. In both cases, before cooling, they must be turned upside down and not touched.
Such a salad should be stored in a dark place, at room temperature.
