Pumpkin juice with dried apricots for the winter
The combination of a sweetish-sweet pumpkin and sour dried apricots gives a wonderful taste: rich, sweet and sour, in which the pumpkin itself is not felt at all. The pumpkin juice with dried apricots turns out amazing: bright, healthy, thick, tasty - you just lick your fingers. Children will drink it with pleasure, and adults will also like it.
Juice is prepared without the use of a juicer, for this recipe it is enough to use a blender or a food processor. In order for dried apricots to boil well and quickly, it must first be poured with boiling water for 10-15 minutes, then finely chopped and mixed with pumpkin. How to dilute the juice with water is a matter of taste, you may want to make it liquid, then add more liquid than specified in the recipe. If you prefer thick drinks, stick to the recipe.
Ingredients:
- pumpkin (peeled pulp) - 1 kg;
- dried apricots - 150 gr;
- citric acid - at the tip of a knife;
- sugar - 200-250 gr;
- water - 3-4 glasses + for steaming dried apricots.
How to make pumpkin juice with dried apricots
Cut the pumpkin into small cubes or thin plates, slices. We shift to a pan with a thick bottom or in a cauldron.
Dried apricots washed in warm water, pour boiling water. Leave for a quarter of an hour or until it becomes completely soft, steamed. We drain the water, rinse.
Cut the soft dried apricots into small pieces. Pour a glass of water into a pan with pumpkin, add dried apricots.
We place it on a small fire and cook, covering it for 30-40 minutes, adding water if necessary. Pumpkin and dried apricots should be well cooked.
Let the fruit and vegetable mixture cool slightly. We mashed with a blender until a thick homogeneous mass without pieces of pulp.
I clean the pan clean, wash off the remnants of the fibers and foam. Pour pumpkin puree, add sugar and citric acid (or pour two tablespoons of freshly squeezed lemon juice). Pour water - you can cold or boiling water so that the juice boils faster. After boiling, cook for ten minutes.
We sterilize jars with a capacity of 0.5-1 liter or less if you are preparing juice for children. Boil the lids for three to five minutes. We pour boiling juice, foam does not need to be collected, it will subside. Twist the lids.
Allow the pumpkin juice with dried apricots to cool, and then store in a shaded, cool place. Good luck with your workpieces!
