A lot of us all summer roll these or those vegetables and fruits in jars, because in the winter sometimes you really want to treat yourself to delicious.

One of my favorite vegetables is beets, I also roll them in jars for the winter. My whole family loves beetroot caviar from boiled beets, today I will share with you my recipe.

This dish perfectly diversifies your table in the cold season, when you especially want something sour and spicy, and beetroot caviar will delight you with just that taste. This vegetable is perfect for those who are on a diet, fasting.

In addition to the fact that beets are very tasty, so it is also incredibly useful. Besides the fact that it contains a huge amount of vitamins, it also perfectly cleanses the intestines from toxins, and also improves digestion.

Beetroot caviar is an excellent cold appetizer that can be served with any of the side dishes, it will never be superfluous in your diet. It turns out as delicious as in kindergarten. It can also be used as a dressing for borsch or even just spread on bread - in any case, you will be satisfied.

To cook a really tasty caviar, I advise you to take root vegetables of small or medium size, as they will be many times tastier and juicier than large ones, and the photos in the recipe will tell you step by step about the cooking process.

Ingredients:

  • boiled beets - 250 grams;
  • carrots - 125 grams;
  • onions - 125 grams;
  • tomato paste - 30 grams;
  • vinegar - 10 milliliters;
  • salt to taste;
  • sugar - ½ tbsp. spoons;

  • garlic - 1 small clove;
  • allspice;
  • Bay leaf;

How to cook beetroot caviar

First, we fry in vegetable oil from carrots and onions. When they become a little transparent, add the tomato paste, let the fry with the paste boil.

Next, add grated beets, vinegar and all the spices. Stir and simmer on low heat for 15-20 minutes.

We put hot, even boiling caviar in a glass jar, roll up the lid.

We put the inverted jar in a non-cold place, wrapping it with something warm.
