Christmas is the main holiday for Orthodox Russians. Hospitable housewives call their family and close friends for dinner. Of course, I want to surprise everyone with my culinary talents and feed those who come. What to cook for Christmas 2019, which menu to choose? The recipes chosen by us especially for such a celebration will help in this.

In ancient traditions, the Christmas table consisted of 12 dishes. The main dish is Christmas kutya. Baking and hot must be present. Mistresses cooked a baked duck with apples, baked pork, chicken, quail. Well, and, of course, could not do without holiday salads. After a long post, I want to treat yourself to fatty foods, add spiciness and piquancy.

The coming 2019 year is symbolized by the year of the pig, so cooking pork for Christmas or abandoning this type of meat is up to you, dear chefs. But the main thing to remember is that at Christmas the table should be hospitable, since it is on this holiday that all relatives gather at the same table and worship Jesus Christ.

Here is a sample menu that we made for the Great Holiday:

  1. Christmas kutia.
  2. Mushrooms stuffed with quail eggs.
  3. Lamb baked in a pumpkin.
  4. Oven country style potato with garlic.
  5. Chocolate cake “Brownie”.

Christmas kutia

On Orthodox holidays, kutia is put on the table as the first dish. The main ingredient of kutia is wheat, but in modern traditions we have departed from this rule and have long begun to use various crops. Our kutya recipe is based on rice. In combination with raisins, dried apricots and walnuts, this dish takes on an incredible taste. Such a tasty “porridge” will be enjoyed by children.

Ingredients:

  • long-grain rice - 1 cup;
  • dried apricots - 1 handful;
  • seedless raisins - 1 handful;
  • dried dogwood - 1 handful;
  • walnuts - 6-7 pcs.;
  • sugar or honey - 1 tbsp. l .;
  • salt to taste.

Cooking method:

  • We choose whole and beautiful dried fruits (dried apricots, raisins, cornel). All together, rinse and pour boiling water. Leave to insist.
  • Rice washed several times with water. We send it to the pan, fill it with water at the rate of 1: 2 (1 part of rice and 2 parts of water) and send to the stove to cook.
  • We are waiting for the rice to boil. After boiling, remove from heat, rinse through a sieve under running water.
  • Again we send the rice to the pan and fill it with cold water (in large quantities). We put on the stove on a slow fire, wait for the cereals to be ready (about 20 minutes of boiling). At this stage, salt to taste.
  • The next step is to peel the walnuts, take out the kernels, break them into small pieces and dry in a dry frying pan (about 3-4 minutes). The dried kernels will be easily peeled off from the bitter husk.
  • From steamed dried fruits, drain the water and dry them on a paper towel. Diced apricots and dogwood.
  • We put the finished rice on a sieve and rinse again under running water. Then all the ingredients (dried fruits, nuts and rice) are placed in a deep container and mixed. Refuel with honey or sugar (at your discretion).
  • Serve in a beautiful bowl. We put on the festive table the first dish.

If desired, you can add kutia with other dried fruits or fresh fruits, for example, apples, prunes. And instead of walnuts, you can take pine nuts, they will be much more useful.

Mushrooms stuffed with quail eggs

An original and sophisticated appetizer must be present at the festive table. Champignons stuffed with quail eggs - a great option for a joyful event. The dish turns out to be unusually tasty, fragrant and satisfying. There are many options for filling for mushrooms, but we are sure that you and your guests will certainly like this method.

Ingredients:

  • champignons - 500 grams;
  • quail eggs - according to the number of mushrooms;
  • smoked sausage - 150 grams;
  • onions - 1 pc.;
  • carrots - 1 pc.;
  • hard cheese - 50 grams;
  • mayonnaise for serving;
  • vegetable oil for frying vegetables;
  • salt, pepper to taste.

Cooking method:

  • The first step is to wash the mushrooms well under running water. Remove the leg and make a small depression for the filling.
  • Next, we proceed to the processing of vegetables. Peel the carrots and onions. Finely chop the onion, grate the carrots on a coarse grater.
  • Cut the sausage into small cubes.
  • We will not throw away products and mushroom legs and cut into cubes for the filling.
  • Quail eggs set to cook. Cook them hard boiled.
  • Well, heat the pan, add a little vegetable oil and start frying the onions.
  • 3-4 minutes after frying the onions, add the carrots. Fry vegetables for another 3 minutes and add sausage as the next step.
  • Increase the heat and fry the filling for 5 minutes, constantly stirring the contents of the pan. Put the prepared stuffing on a plate, rid it of excess fat and allow it to cool slightly.
  • Gently cool the minced meat with a teaspoon into the champignons to make a small slide. We grate hard cheese on a fine grater and sprinkle with it each mushroom.
  • Turn on the oven 190 degrees. We send our mushrooms there for 20 minutes to bake. We take it out of the oven and let it cool slightly. We serve to the table, decorated with halves of quail eggs.
Advice!
If you did not have smoked sausage in the refrigerator, you can replace it with any boiled or smoked meat.

Lamb baked in pumpkin

Pumpkin is a simple and affordable product that is loved by many of us. With the advent of autumn, every family begins to cook porridge with pumpkin, bake pumpkin in the oven with honey. In our recipe, pumpkin will serve as an edible pot filled with delicious lamb.

Ingredients:

  • lamb flesh - 700 grams;
  • onions - 1 pc.;
  • red and yellow bell peppers - 2 pcs.;
  • salt, pepper to taste;
  • garlic - 4 cloves;
  • olive or vegetable oil for frying vegetables;
  • thyme - 3-4 branches;
  • tomatoes - 2-3 pcs.;
  • small pumpkin - 2 pcs.

Cooking method:

  • Rinse lamb meat well under running water. Remove film and excess fat. Next, cut the meat into small cubes.
  • Peel the onion and chop finely.
  • Heat the pan, add olive or vegetable oil (it is better to use olive, since lamb itself is a very fatty product). Fry the meat in a pan until golden brown. Add the onion and fry again for 5 minutes. Do not forget to stir.
  • Peppers and peppers are removed. Dice the size of pieces of meat.
  • Put the contents of the pan into a container, and fry the pepper in this pan. Combine meat and bell pepper. Mix everything, salt and pepper to taste. My tomatoes and cut into circles. If it doesn’t work, we cut it with beautiful squares.
  • Wash the pumpkin well. Cut off their hats. Carefully remove the middle leaving the walls of the “pot” about 1.5-2 cm. Peel the garlic and let it pass through the press. Combine with salt and pepper.
  • With a garlic mixture, rub our pumpkins from the inside. Fill the edible pots with meat filling.On top of the filling, put pieces of tomato and a sprig of thyme.
  • We cover the pumpkins with lids and immediately turn on the preheat oven to 160 degrees.
  • Bake the "pots" for 1 hour.
Advice!
In winter, it is difficult to choose juicy and tasty tomatoes, but good housewives always have supplies of fresh vegetables and fruits in the freezer. Instead of fresh tomatoes in the recipe, you can use frozen or dried (if any).

Oven-style village potato with garlic

What could be better on a side dish than oven-baked potatoes. The spicy taste of the dish with a fragrant appetizing crust fits perfectly into the Christmas menu. Potatoes according to this recipe go well with any sauce.

Ingredients:

  • potatoes - 1 kg;
  • garlic - 3 cloves;
  • vegetable oil - 3 tbsp. l .;
  • curry, paprika, salt, black pepper to taste;
  • dried dill - 1 tbsp. l

  1. We wash the potatoes well under running water several times. We will bake it in a peel. We recommend using a clean brush.
  2. Cut the tubers into uniform beautiful slices. Send them to a deep container.
  3. Add salt, spices and dried dill.
  4. Pour in vegetable oil and mix thoroughly with your hands. All spices and oil should be evenly distributed.
  5. We turn on the oven 200 degrees, and in the meantime we prepare a baking sheet.
  6. We spread the potatoes in an even layer and send the pan to the oven for 25-30 minutes.
  7. We get the potatoes from the oven and check it for readiness. If necessary, send for another 5-10 minutes to bake.
  8. Serve hot, garnished with fresh dill.

Brownie Chocolate Pie

If you want to please your little households and guests, then prepare this amazingly delicious and tender cake for Christmas. Kids will be delighted with the sweet treat. The homeland of this cake is considered the United States and Canada, but in Russia for many years it has been very popular. It goes well with cocoa, coffee and milk.

Ingredients:

  • butter - 180 grams;
  • sugar - 280 grams;
  • eggs - 3 pcs.;
  • flour - 160 grams;
  • salt - 0.5 tsp;
  • vanilla sugar - 1.5 tsp;
  • cocoa powder - 100 grams.

Cooking method:

  • Grind butter with sugar to a lush consistency.
  • In the resulting mass, gradually introduce 1 egg, each time breaking the mixture until smooth.
  • Now mix the dry ingredients of the cake (cocoa powder, flour, salt, vanilla sugar).
  • Add dry mixed ingredients through a sieve to the egg-oil mixture, constantly whipping with a mixer at low speeds. You should get a creamy dough.
  • Turn on the oven 180 degrees and wait for it to warm up well. We prepare a baking dish. Lubricate it a little with butter.
  • Gently pour the dough into the mold. Level with a spatula, giving the dough a uniform layer. We send the form with the dough into the oven for 25-35 minutes. Check the readiness of the pie in the standard way - pierce with a wooden stick. The finished “Brownie” should be a little damp in the middle. Do not overdry the pie.
  • When the cake is ready, turn off the oven and open the door. Leave it to cool there. In this form, the pie can already be served to the table, but you can cut it into two parts and use it as cake cakes. The cream can be made according to the standard custard recipe. The pie turns out to be delightfully delicate, velvety with a pleasant chocolate taste.
Important!
All the ingredients for the cake should be at room temperature, so take everything out of the refrigerator in advance and let them stand for a while.
