New Year's Eve meeting is always a long-awaited and bright event, for which they prepare in advance. The festive menu should contain many snacks that will delight and surprise guests with unusual combinations and taste.

Salad recipes for the New Year 2019 should not contain pork in the recipe due to the symbol of the next 365 days.

Quick salad

For the busiest housewives who do not have time to cook, you will like the recipe without cooking the ingredients. You can cook a festive New Year’s salad half an hour before the guests arrive and impress with your culinary talents. The appetizer is based on ready-made and canned foods, which only need to be mixed and seasoned with mayonnaise dressing. All components can be replaced with similar products.

Ingredients:

  • raw smoked sausage - 210 g;
  • canned red beans - ½ cans;
  • fresh cucumber - 1 pc.;
  • barrel pickled cucumber - 1 pc. medium size;
  • carrots - 1 pc. medium size;
  • dill greens - 5-6 branches;
  • canned sweet corn - ¼ jars;
  • mayonnaise sauce - 200 ml;
  • ground black pepper and salt - to taste.

For cooking, you only need a grater, cutting board, can opener, spoon and salad bowl.

Step cooking

Wash, peel the carrots, grate with a coarse grater, place in a salad bowl.

Wash a fresh cucumber, cut off the ends, if necessary, free from a hard peel, chop in small cubes, add to the carrots.

Rinse pickles, finely chop into cubes, add to the salad bowl.

Open a tin can with sweet corn, drop the contents onto a sieve to remove the juice, transfer the cans to the rest of the ingredients.

Remove canned red beans from the can, add to the salad bowl.

Peel the sausage, cut into cubes or strips, send to the salad.

Chop the greens finely with a knife, add to the dish, pepper and salt to taste.

Dress the salad with mayonnaise, mix thoroughly the finished dish.

For cooking, smoked sausage can be replaced with boiled, red beans - canned green peas. Store salad dressed with mayonnaise for no more than 2 hours in the refrigerator.

Cooking herring "under a fur coat" requires the preparation of salad ingredients in advance. The combination of boiled vegetables with herring flavor, sweet carrots and beets is a favorite for adults and children. This is an economical recipe that perfectly satisfies hunger and is easily absorbed by the body.

To prepare herring “under a fur coat” choose slightly salted fish or make salting yourself.

Ingredients:

  • medium-sized potatoes - 2 pcs.;
  • chicken eggs - 2 pcs.;
  • slightly salted herring or fillet - 200 g or 1 fish;
  • mayonnaise sauce - 200 ml;
  • onions - 1 pc. medium size;
  • medium-sized beets - 1 pc.;
  • medium-sized carrots - 1 pc.;
  • table salt to taste.

It is important that the herring is seedless. Buy the finished filet or remove the ridge and bones yourself with a teaspoon. Herring “under a fur coat” can be formed in a salad bowl or serving ring of any shape.

Step cooking

Boil potatoes, carrots, eggs, beets in separate containers, drain the liquid, cool and peel.

Cut herring fillet into small cubes, lay on the bottom of the salad bowl.

Chop the onion into cubes, place on top of the fish layer.

Lubricate with mayonnaise, spread the dressing with a fork.

Grind boiled potatoes on a coarse grater, put on top of previous layers, salt, soak in mayonnaise.

Grind boiled carrots on a grater, lay on top of a potato layer, salt, and coat with mayonnaise sauce.

Crush the eggs with a fine grater, lay with the next layer of "fur coat", salt, add the sauce.

Grate boiled beets, evenly distribute in a salad bowl on top, soak with mayonnaise filling. Do not salt.

Ingredients:

  • chicken egg -1 pc.;
  • fresh eggplant - 1 pc.;
  • dried mushrooms - 25 g or 1 tbsp. l .;
  • onions - 1 onion medium size;
  • mayonnaise sauce - 25 ml or 1 tbsp. l .;
  • sunflower oil - 25 ml or 1 tbsp. l .;
  • greens - 5-6 branches of dill, parsley, green onions;
  • table salt, ground black pepper - to taste.

For cooking, you need a frying pan for frying vegetables, a container for beating eggs, a blender or mixer, a cutting board, a knife.

Wash the eggplant, dry, cut the ends, chop into oblong pieces with a thickness of 0.5-0.7 mm.

Ingredients:

  • onions - 1 onion medium size;
  • sunflower oil - 50 ml or 2 tbsp. l .;
  • beets - 200 g or 1 large vegetable;
  • table salt and ground black pepper - to taste.

For cooking, you will need a container for cooking beets, a cutting board, a salad bowl, a knife, a frying pan for frying onions.

Useful advice!
Boiled beets will be easier to peel if, after boiling, immediately place it in cold water for cooling.

Boil the beets until cooked, drain the water, peel, grate, put in a salad bowl.

Peel the onion from the husk, finely chop into cubes.

Fry the chopped onion in a pan with the addition of vegetable oil until a golden color appears, stirring constantly. Send the fried onions to the beets.

The main motifs of the dish are set by champignons, bell pepper, Korean carrots. Appetizer is low-calorie, hearty and light.

Ingredients:

  • bell pepper - 3 medium-sized vegetables of different colors;
  • chicken breast or fillet - 300 g;
  • fresh or frozen champignons - 300 g;
  • Korean carrots - 300 g;
  • fresh tomato - 3 pcs.;
  • slightly stale wheat loaf - 150 g or 1/3;
  • vegetable oil - 100 ml or 4 tbsp. l .;
  • apple or wine vinegar - 25 ml or 1 tbsp. l .;
  • table salt - to taste;
  • ground black pepper - 1/3 tsp;
  • table mustard - 15 ml or 1 tsp.

The number of components is indicated for treating 4 people. Cooking time - half an hour.

Step cooking

Boil the chicken meat until tender, salt the water during cooking. Dry the cooked boiled fillet, fry in a heated pan with the addition of vegetable oil. Cool the meat, cut into cubes, put in a salad bowl.

Grind fresh or thawed champignons along so as to preserve the structure of the mushroom, fry for 5 minutes in the oil in which the chicken was cooked, add to the chicken.

Wash the bell pepper, remove the core and seeds, cut into strips of 0.5 cm strips, send to the salad bowl.

Cut the tomato into cubes, put to the rest of the ingredients.

Korean carrots add to the total mass.

Remove the crusts from the hardened loaf, cut the bread into cubes, and dry in a pan. If desired, fry the cubes in vegetable oil to get croutons. Add to the salad mass.

Mix all the ingredients in the salad bowl.
