Eggplant with meat in the oven - interesting combinations of seasonings
I offer you a step-by-step recipe with a photo of a delicious second dish prepared from simple and affordable products. Almost all recipes from eggplant and meat are prepared very quickly, but it turns out very tasty, this dish is no exception.
For this recipe you need to make a sauce of tomatoes, sweet peppers and tomato puree, but if you don’t have time to cook, replace it with a thick ketchup with pieces of vegetables, it will also turn out delicious.
In the oven, we need 60 minutes to cook the eggplant with meat, cheese and garlic in the oven. From the ingredients indicated in the recipe, 5-6 servings will be obtained.
Ingredients:
- eggplant - 2 pcs.;
- ground beef - 380 g;
- bell pepper - 80 g;
- tomato - 150 g;
- tomato puree - 200 g;
- onions - 210 g;
- oregano - 1 teaspoon;
- mint, parsley, cilantro;
- hard cheese - 30 g;
- garlic - 2 teeth .;
- vegetable oil, black pepper, sugar and salt.
How to cook eggplant with meat and cheese in the oven
Ripe eggplant with elastic, dark purple skin, cut into round slices, sprinkle with a pinch of salt and leave for 20 minutes.
Chilled ground beef season with salt. This dish can be prepared with any meat, but beef tastes better.
Peel the onion from the husk, chop finely. Separate half the chopped onion, add to the bowl with minced meat.
Pour oregano, carefully mix the meat with seasonings and chopped onions.
Grease the refractory form with vegetable oil. On a slice of eggplant, put a portion of minced meat, then the next slice of eggplant and again minced. This way we fill the whole form.
In vegetable oil, fry onions until translucent. Add diced tomatoes and sweet bell pepper.
Fry vegetables over moderate heat for 5 minutes.
Add tomato puree to the pan, simmer everything together for 10 minutes. At this stage, you can grind the finished sauce in a blender, you get a smoothie.
Finely chop the cilantro, parsley and mint, mix with vegetable sauce, salt to taste, add a pinch of sugar, pour the sauce into the mold.
We heat the oven to a temperature of 180 degrees Celsius. Sprinkle the dish with grated cheese mixed with garlic, put the mold in a heated oven, cook for 40 minutes.
Before serving, decorate with fresh herbs, pepper, freshly ground black pepper.
