Cabbage cutlets - the most delicious option
Cabbage cutlets, of course, will not replace meat, but for a change of diet or when there is not a gram of meat, such recipes will be very useful. Prepare cutlets from cabbage lean or with the addition of eggs, sour cream, mayonnaise, cheese, cottage cheese. They can be baked in the oven, fried in a pan or cooked in a double boiler.
In the proposed recipe with a photo, cabbage cutlets are prepared without meat, but an egg is added to the minced meat. If you want to make lean, exclude the egg by adding a tablespoon of semolina instead. Cabbage is preliminarily blanched for several minutes - such a preparation will make it soft and relieve a specific cabbage smell. Add spices at your discretion. You can use a ready-made mixture of spices for vegetable dishes or add a little pepper, aromatic herbs, chili, paprika - experiment, look for your own, the most delicious option.
Ingredients:
- white cabbage - 350 gr;
- wheat flour - 3 tbsp. l;
- egg - 1 pc;
- salt to taste;
- onions - 1 large head;
- vegetable oil - 3 tbsp. l;
- dried Provence herbs - 0.5 tsp;
- ground black pepper - to taste;
- chili or paprika - 2-3 pinches.
How to cook meatless cabbage cutlets
While water is boiling in a pan to blanch the cabbage, we will prepare the vegetables. Finely chop the onion. Shred the cabbage with a thin short straw.
We put the cabbage in boiling water, reduce the heat and leave for five minutes. Cabbage should become soft, but it does not need to be digested.
We drain the water through a colander or sieve, leave the cabbage to cool, so that you can squeeze and not get burned. Or sprinkle with cold water and then squeeze.
In a pan, heat a spoonful of oil. Pour onion cubes, pass until lightly browned.
Put the squeezed cabbage into a bowl, add the fried onion and beaten egg. We mix.
Pour in flour, salt to taste, spices according to the recipe or add spices of your choice.
All ingredients are mixed well. A viscous mass should be obtained that will not crumble into small pieces. If crumbles, add more flour.
Having wetted hands with cold water, we form small, flat-rounded cutlets. Spread in a hot pan with butter and fry over low heat for about three minutes on each side.
We serve cabbage cutlets with any side dish or with fresh vegetables, tomato, sour cream sauce. Bon Appetit!
