Pumpkin Samsa
Samsa is a national Uzbek dish, which is a puff pastry with various fillings. Most often, pastries are made with a filling of meat and fat tail. However, vegetable options are no less popular. We suggest you try the unsweetened version of samsa with pumpkin filling.
To prepare such baking at home, it is important to choose pumpkin unsweetened varieties with elastic pulp. It is necessary to grind it correctly. Too small cuts will turn the filling into a mushy mass, and with a large cut, the filling can remain raw. Therefore, it is better to cut the pumpkin into cubes with a side of 4 - 5 mm.
Samsa is traditionally baked in special tandoor ovens, but in an ordinary oven you can get an excellent result. To prepare products according to this recipe, you can buy a ready-made puff pastry or cook it at home. For samsa with pumpkin filling, yeast puff pastry is suitable.
Ingredients:
- puff pastry - 250 grams;
- pumpkin - 300 grams;
- onions - 1 piece;
- vegetable oil - 1.5 tablespoons;
- tomato paste - 1 teaspoon;
- egg yolk - 1 piece;
- black sesame seeds - 1 teaspoon;
- salt pepper.
How to cook samsa with pumpkin
Peel and finely chop the onion
Peel the pumpkin and cut into small cubes.
Add vegetable oil to the pan, heat it. Put the pumpkin and fry until golden brown. Add onion, cook for 2 - 3 minutes.
Spread tomato paste, salt and pepper. Stir the filling and cook for 1 to 2 minutes. Cool the mass.
Defrost the dough and cut out circles with a diameter of 8 cm.
Roll out each circle a little and put one tablespoon of the filling in the middle.
Bend and pinch the edge as in the photo.
Connect 2 more edges and form a product in the form of a triangular pie. It is important to pinch the edges well.
Put samsa on a baking sheet shot with parchment with the seam down. Grease each product with yolk.
Sprinkle the pastries with black sesame seeds and send to the oven preheated to 200 degrees.
Bake 30-40 minutes until golden brown. Products will increase in size and rise.
Put samsa on a wooden board or grate and cool.
Samsa has a crispy dough structure and juicy tender filling.
Serve these items for tea or dinner. Samsa does not stale for a long time and retains its crisp properties.
