Bedana salad with potato straws and beets
This is a step by step recipe with a photo, according to which it is easy to prepare a delicious vegetable salad of modern Uzbek cuisine - Bedana salad. The ingredients for this dish are simple, inexpensive, and are usually found in the bins of any hostess.
The dish is prepared quickly, if you boil or bake beets in the oven in advance. You will also need a grater for Korean carrots, if you do not own a knife so masterfully that you cut raw potatoes into thin chips.
It will take 25 minutes to cook. From the ingredients indicated in the recipe, 2-3 servings will be obtained.Ingredients:
- boiled beets - 150 g;
- raw potatoes - 280 g;
- walnuts - 35 g;
- quail egg - 2-4 pcs.;
- cilantro or parsley - 40 g;
- mayonnaise - 50 g;
- vegetable oil, salt.
How to make Bedana salad
Peel raw potatoes, rinse with cold water. Cut the tubers into thin strips using a grater for Korean carrots.
Pour a few tablespoons of refined vegetable oil for frying into the pan, send potato straws in small portions in hot portions, and fry until golden. We put the finished potatoes on a paper towel so that excess oil is absorbed.
Boiled or baked beets are peeled. Cut the beets into thin strips in the same way as potatoes.
At the bottom of the salad bowl we put potatoes, sprinkle with salt to taste.
Put the beetroot straws on the potatoes, also add salt.
Dry the walnuts for several minutes in a hot frying pan without oil. We chop nuts with a knife or knead a rolling pin.
Pour the chopped nuts on the beets.
A bunch of fresh herbs chopped finely. Pour chopped greens into a salad bowl. Both cilantro and parsley are suitable for this recipe.
Boil hard-boiled eggs, cool in ice water, peel off the shell, cut in half or in four. By the way, chicken eggs are also suitable for this recipe.
In the center of the salad we make a recess in which we place the mayonnaise on top of the sliced boiled eggs. We decorate the appetizer with fresh herbs and immediately serve.
