Oven Frozen Blueberry Pie
Frozen berries are a very good harvest. They can be used for baking, various stewed fruit, fillings ... And it’s convenient to harvest raspberries, blueberries, currants and other “trifles”: the berries do not need to be chopped or processed in some way. But when it comes time to get berry stocks from the freezer, a real gastronomic holiday begins! After all, you can double-cook in the oven a cake with frozen blueberries, which will delight you with a pleasant berry taste, magnificent dough, and this step-by-step recipe with a photo will help to bake it.
Ingredients:
- butter - 200 g;
- chicken eggs - 4 pcs.;
- sugar - 1 tbsp .;
- flour - 1 tbsp .;
- baking powder - 1 tsp. with a slide;
- frozen blueberries - 1 tbsp .;
- salt - 1 pinch
In addition, you will need some butter and flour to process the baking dish.
How to bake a blueberry pie
Before preparing the dough, prepare the butter: remove it from the refrigerator and keep it warm for at least half an hour. During this period, the oil will soften and become more tender and supple - just the one you need to prepare the most delicious dough. Transfer the softened butter to a large bowl (in which you are going to stir the dough), add sugar to it and stir with a fork or whisk until smooth.
For the time being, do not change the fork into a spoon: it will also be useful to you in the next step of adding eggs. So, break one egg into the oil mass and with a fork, mix it into a homogeneous substance.
In turn, add subsequent eggs and mix the mixture with a fork until smooth.
Salt the mixture, pour flour into it.
Immediately pour the baking powder on the unstirred flour and add the frozen berries. You do not need to defrost blueberries first: then it will become soft and crush when kneading.
Therefore, add frozen berries to the dough and immediately knead the dough with a spoon. At this stage, one tricky trick is used: you add the berries directly to the hill of flour and at the same time, as if, crush them with flour during kneading. Due to this, the berries during baking will not fall to the bottom of the pie, but will be evenly distributed throughout the dough.
With a piece of butter, grease a baking dish with high edges: grease the bottom of the mold and the edges themselves. Then grind this form with a small amount of flour, crush the excess flour.
Transfer the finished dough with frozen blueberries into a baking dish and smooth with a spoon. In raw form, this dough is thick, but not liquid.
In the oven, under the influence of heat, it will first become more liquid (the butter will completely melt), and then baked. Preheat the oven to 180 degrees and put in the form with the dough. Bake the cake for half an hour. If the pastries on top are already browned and “tanned” to a beautiful bronze hue, then the cake is ready!
