Gourmet Eggplant Salad
Every day eggplant salad “Vkusnotische” is one of the options for a simple, hearty and nutritious salad. Having tried the salad for the first time with a friend, I’ll tell you honestly, I really liked the taste, but the salad was so heavy and greasy that for myself I decided to modify it a little.
So, in principle, I did not change the composition of the salad - eggplant, soaked in eggs, fried onions, greens. The only thing I advise you to cook in a non-stick pan, almost without oil. You can use mayonnaise dressing, a small amount of homemade mayonnaise is the best option. Hearty salad, perfect for lunch.
Ingredients:
- eggplant - 1 pc.;
- onions - 1 pc.;
- greens - to taste;
- homemade mayonnaise - 1 tbsp;
- vegetable oil - 1 tbsp;
- chicken eggs - 1 pc.;
- dry ground mushrooms - a pinch;
- salt, pepper - to taste.
Simple Eggplant Salad Recipe
Prepare all the necessary ingredients on a list. Choose medium-sized eggplant, wash and dry, trim the ends on both sides. Cut the eggplant into small oblong strips.
Take a deep bowl, beat in a chicken egg. Shake the egg with a whisk.
Immerse the blue slices in a bowl with the egg, mix well so that each piece of blue is in the egg. Leave eggplant for an hour.
Peel and rinse the onion, dry, cut into half rings.
Preheat a non-stick pan. Lubricate the pan with a thin layer of oil, transfer eggplant and fry for several minutes.
In a separate pan, brown the onion slices, and use a minimum amount of oil.
Combine the eggplant and onion in one bowl, pour a little dry mushrooms crushed into dust.
Add a little mayonnaise, salt, pepper, chopped greens to the salad. Stir the salad and serve.
