Light beetroot salad with goat cheese and pine nuts
Beetroot salad with goat cheese and pine nuts is a tasty, simple and at the same time unusual salad, which turns out to be amazing, both externally and on taste.
It is better to prepare beets in advance: it can be either boiled or baked with herbs, spices, or whatever you like. Pine nuts in combination with goat cheese give an amazing result. It is in this salad that a mix of greens fits perfectly - arugula, spinach, different types of cabbage, etc.
For refueling, it is best to use lemon juice and oil to taste - olive, garlic, or simple sunflower.
You can even serve such a salad on the festive table or just for lunch / dinner.
Ingredients:
- beets - 1 pc.;
- goat cheese - 80 g;
- pine nuts - 2 tbsp .;
- mix of salads - 30 g;
- garlic oil - 1 tbsp;
- lemon juice - 1 tsp;
- salt, pepper - to taste.
How to make beetroot salad with goat cheese and pine nuts
Prepare all the necessary products on the list. Choose any salad mix, rinse and dry. Put the salad on a plate.
Boil beets on the eve or bake until tender - 2-3 hours, as you prefer. Peel the beets.
Cut the beets with medium-sized slices, put on top of the salad.
Next, prepare goat cheese: cut or break it into small segments with your hands, spread between pieces of beetroot.
Sprinkle salad with pine nuts.
Then sprinkle all the ingredients with a small amount of lemon juice, add oil, salt and pepper, you can add a little dry herbs. Serve the finished salad immediately to the table.
