Zimushka salad with chicken liver and Korean carrots
Today we are going to prepare a Zimushka salad with chicken liver and Korean carrots. This recipe with photos is very interesting and unusual due to the fact that pancakes need to be prepared from the liver.
Such a dish will be the best snack on the festive table, but by the way, it can be served for an ordinary family dinner.
Ingredients:
- chicken liver - 200 grams;
- chicken eggs - 1 pc.;
- flour - 2 tables. l .;
- mayonnaise - 2 tables. l for pancakes + the same amount for salad;
- vegetable oil - 1.5 tables. l for pancakes;
- pickles - 150 grams;
- Korean carrots - 150 grams;
- dill - 3-4 branches;
- salt, pepper - to taste.
How to make Zimushka salad
To prepare the salad, you need to fry the liver pancakes from chicken liver. This is done very simply, especially if you have a blender. Place the washed chicken liver in a blender bowl. Also drive a chicken egg there.
Add a little mayonnaise and the right amount of flour.
Pour a little oil into the bowl so that the pancakes are easily removed from the pan during the roasting process.
Beat the dough for pancakes to get a homogeneous smooth mass. If you do not have a blender, then roll the liver through a meat grinder, and mix the remaining products with a whisk or fork.
Fry liver pancakes in a pan slightly oiled. Pancakes are easily rolled over and removed.
Fold the pancakes on a plate and let cool.
Roll liver pancakes and cut into strips.
Pickled cucumbers also cut into strips, after trimming the tails.
In a bowl, add the products that are sliced: liver, cucumbers and add pickled Korean carrots. Also add finely chopped dill to the salad.
Season the salad with mayonnaise and add salt and pepper to taste.
Ready salad can immediately be served to the table, or you can cool a little in the refrigerator.
