Here is a simple, affordable, and most importantly the most delicious recipe for instant snacks from eggplant. She will help you out in any situation, especially if unexpected guests come to you. Georgian eggplant will appeal to everyone. They are spicy and pungent, due to hot pepper and garlic. This appetizer is suitable for any occasion: be it some kind of holiday or just dinner in the family circle. These eggplants come as a full appetizer, but they can also be served with meat, potatoes and other side dishes.
Ingredients:
- eggplant fruits - 2 pcs.;
- table salt - 1 tsp;
- garlic - 3-4 cloves;
- hot pepper (chilli) - 1/3 part;
- vegetable oil - in order to fry eggplant + 1 tbsp. l for refueling;
- table vinegar - 1 tbsp. l .;
- parsley / cilantro greens - 1/2 bunch.
How to cook fast eggplant in Georgian
First, prepare the eggplants: wash them, cut the tails and cut the fruits into circles (20 mm thick). Do not cut the vegetables in too thin circles, because this way they will not be able to maintain their shape.
Put the cut blue ones in a convenient container and generously sprinkle with kitchen salt. Leave for 30 minutes. Due to this, vegetables will let the juice and give all the bitterness.
After that, drain all the liquid and blot the blue ones with a paper towel. Next, fry them in hot odorless vegetable oil. No need to fry all vegetables at once. We do this in small steps so that each eggplant circle is fried on both sides. To remove excess sunflower oil from vegetables, pat them with a paper towel.
We are preparing a dressing for our snack: chop the garlic and chilli pepper, chop the herbs, pour in a tablespoon of oil and vinegar. Now slightly beat the dressing with a fork.
